The Pago de La Jaraba wine family is the purest expression of the Manchego terroir, shaped by sustainable vineyard practices and a winemaking philosophy focused on minimal intervention to preserve the natural purity of the grape.

Pago de La Jaraba
This flagship wine is crafted from the estate’s finest plots of Tempranillo, Cabernet Sauvignon, and Merlot, each vinified separately in French oak vats. After fermentation, the wines are blended and aged in new French oak barrels with extra-fine grain, sourced from several prestigious cooperages.
Before bottling, a final blend is made that harmonizes the influence of the different woods used during aging, resulting in a wine of exceptional depth and elegance.

This unique Merlot comes from a single plot cultivated using exclusive practices to maximize concentration of phenolic and aromatic compounds. Unconventionally, it undergoes a white-wine-style fermentation, followed by several months of aging on lees. It is then matured in new, extra-fine grain French oak barrels.
A bold and elegant red, marked by richness, balance, and distinctive varietal expression.

The grapes are vinified slowly in temperature-controlled stainless steel tanks, and the wine is aged on lees for several months to enhance mouthfeel and aromatic complexity.
The result is a crisp, expressive white wine with vibrant acidity and finesse.
