A Mark of True Excellence
In 2019, the European Union granted Pago de La Jaraba the prestigious Denomination of Origin Protegida (D.O.P.) Pago — the highest classification in Spanish viticulture.
Unlike broader appellations, the D.O.P. Pago designation is reserved for single estates with truly unique soil, microclimate, and identity — where every wine must be grown, vinified, and bottled entirely on site.

A Higher Standard of Excellence
Para obtener la DOP, se debe cumplir con estrictos requisitos de calidad y trazabilidad. Esto implica que toda la uva utilizada en la elaboración del vino debe proceder del mismo pago, y la bodega encargada de su producción también debe estar localizada en el pago. Además, la viticultura y enología aplicada deben estar enfocadas a realzar las características distintivas del terruño.

The Vineyard

At La Jaraba, we work with both native Spanish varieties — such as Tempranillo and Graciano — and classic Bordeaux grapes like Cabernet Sauvignon, Merlot, and Sauvignon Blanc.
Each grape is carefully matched to the most suitable plot based on soil composition, sunlight, and drainage.
The outcome is a collection of wines that reflect the full potential of our terroir — true sensory expressions of place.
The Soil
The soils at Pago de La Jaraba are diverse, living, and expressive — shaping the flavor, structure, and identity of our wines:

Loam Soil
Rich in rounded alluvial stones from an ancient riverbed.
Result: Wines with mineral notes, depth, and expressive character.

Sandy Loam Soil
Deep soils composed primarily of silicates, allowing rapid water drainage.
Result: Wines of great intensity and balance, shaped by high water stress in the vines.

Clayey Sandy Loam Soil
Medium-depth soils with excellent nutrient availability and high quartzite content.
Result: Vines produce wines with deep color, strong structure, and medium to high aromatic intensity.
The Climate

Our 77 hectares of vineyard are surrounded by 92 hectares of Mediterranean woodland, primarily holm oaks and pines.
This unique ecosystem creates a natural microclimate that:

Combined with the mineral-rich, fluvial soils, our climate produces wines that are:
